식당을 차린 사람들 이야기를 들어보면, 시작하게 된 계기가 다양하다.
요리가 좋아서인 경우도 있지만, 아닌 경우도 많다.
“취업이 어려우니까…”
“나만의 개성을 살리는 일을 하고 싶잖아요?”
“회사에서 톱니바퀴처럼 일하는 게 적성에 안 맞더라고요.”
“퇴직금으로 할 수 있는 일이 많지 않아서…”
요식업은 비교적 적은 돈으로 누구든 도전할 수 있다.
그래서 너도나도 뛰어든다.
이 작은 땅덩어리에, 식당이 66만 개가 넘는다고 한다.
그중 열에 여덟은 5년 내로 문을 닫는다.
그 경쟁에서 살아남으려면?
“맛은 기본이고, 특색이 있어야지! 이 식당에만 가야 하는 이유!”
“다른 곳에서는 경험하지 못하는 그런 음식을 만들어야 하는데….”
그렇게 보면 내 식당만큼 특색 있는 식당은 없다.
내 요리는 많게는 2천 년 전, 적게는 100년 전에 살았던 희대의 미식가들이 극찬한 요리다.
내가 사용하는 재료들은 역사 속으로 사라진 식자재들이다.
내 식당은 차원이 다르다.
비유나 과장이 아니라, 정말로.
